Our family-owned olive grove in the sun-soaked Palestinian valleys boasts organic olives grown on over 350-year-old trees that have been passed down through generations. The annual olive harvest takes place in late fall when the sweet aroma of fresh-pressed olives fills the air from October to January. Each olive variety is meticulously hand-picked and immediately cold-pressed to preserve its fresh flavor and rich antioxidant and polyphenol content. Our unfiltered first press combines various Mediterranean olive varieties to create a uniquely vibrant, green color and balanced taste with artisanal notes. With a high smoke point, it is versatile for cooking and perfect for dipping or finishing.
